So I was being nosy last weekend while at G-Mom's, my husbands grandma, house, and I found this recipe. I think she said it was given to her at an AARP luncheon I do remember that she said it was some of the best brittle she had ever had.It's so simple and really good. Thankfully, she doesn't mind my poking around her kitchen. I guess it's something she is used to with 6 kids growing up searching for snacks and making goodies of their own. She is a patient woman letting all that mess go on in there!
*Please be watchful, the sugar boils up when the vanilla is added. As with all candy making, please be extra careful with the hot sugar!
Microwave Nut Brittle (I used cashews, because it was what I had on hand)

1 Cup Sugar
1/2 Cup Karo Syrup
Mix Well. Microwave on high for 4 minutes
add:
1 Cup Nuts of choice
Mix well. Cook on high 3 1/2 minutes
add:
1 Tbsp. Vanila
1Tbsp. Butter
Mix well. Cook 1 minute
add:
1 Tbsp. Baking soda
Stir gently. Spread on greased cookie sheet
